This spicy pork loin is savoury, tender and packed with flavour from taucu, garlic and fiery thunder chili. Perfect with hot steamed rice, it’s an easy way to turn freezer ingredients into a delicious family meal.
For the pork
1. Pork loin, thinly sliced
2. Salt
3. Black pepper
4. Sugar
5. Cornstarch
6. Dark soysauce
7. Soysauce
8. Cooking oil
For the stir fry :
1. Onion, sliced
2. Garlic, sliced
3. 1 teaspoons of taucu (fermented soybean paste)
4. Thunder chili, sliced, to taste
5. Red capsicum
6. A little water, as needed
7. Cooking oil, as needed
Step 1: Marinate the pork
In a bowl, combine the sliced pork with salt, black pepper, sugar, cornstarch, dark soy sauce, light soy sauce and a dash of oil. Mix well and marinate for 30 to 60 minutes. I marinated mine for about an hour.
Step 2: Sauté the aromatics
Heat a little oil in a pan over medium heat. Add the sliced onion and garlic. Sauté until fragrant.
Step 3: Stir fry the pork
Add the marinated pork and stir-fry until mostly cooked. Add a small splash of water to loosen the sauce and keep the pork from drying out.
Step 4: Add the taucu
Stir in the taucu and mix well to coat the pork. This adds a savoury, fermented soybean flavour to the dish.
Step 5: Add the chili and capsicum
Add the sliced thunder chili and red capsicum. Continue stir frying until the pork is fully cooked and the vegetables are tender crisp. Add a little more water if you prefer extra sauce.
Step 6: Serve
Serve hot with steamed rice and your favourite vegetable dishes.
1. Adjust the spice level: Thunder chili can be extremely spicy. Use less or leave it out entirely if your children can’t eat spicy food
2. Make a milder version: Bell peppers add colour and sweetness without the intense heat.
3. Cut the pork into manageable pieces: Thinly slice the pork across the grain to make it easier to chew. Cornstarch is a must to make the pork super tender
4. Encourage them to try: I like letting my kids explore different flavours. They don’t have to love every dish or finish everything, but being willing to try is a good start.
1. Swap the protein: You can use chicken or beef instead of pork. Adjust the cooking time according to the cut and thickness.
2. Control the heat: Start with a small amount of thunder chili, especially if you’re unfamiliar with its spice level. You can always add more.
3. No thunder chili? Use red or green capsicum for a milder stir fry.
4. Keep the pork tender: Slice it evenly, marinate it well, and avoid overcooking.
5. Use what you have: This is a flexible recipe for clearing out your fridge or freezer. You can adjust the vegetables based on what needs to be used up.
6. Plan for leftovers: Serve the pork with rice for dinner, then enjoy the leftovers for lunch the next day.
